I can just tell it’s going to be a daiquiri weekend, and since I wrote the Navy-strength rum column way back in June and never really got back around to saying how to use the stuff, let’s come at it from that angle.
Gentlemen, chill your glassware. Ladies, ditch the heels and find something that firmly grips the ground — heads, standards, and mercury will keep high this weekend, but Coco Chanel clearly never cut a rug with The Overproof Daiquiri. Bang-o-rang.


2 parts Smith & Cross Jamaica Rum
1 part lime juice
1 part simple syrup
Bitters optional but encouraged. Angostura works well.

Shake it with vigor and a smile for a good 15-20 seconds, and strain into a chilled cocktail glass. 


The more attentive among us may notice that this daiquiri recipe basically halves the volume of spirit compared to our Flor de Caña version. Comparing the bottles will reveal that Flor is 40% ABV and S&C clocks in at 57%. When one considers this along with the relative robustness of each, it all begins to make sense. Still, a daiquiri is nothing if not a canvas upon which the host may express his own sense of sunny-season hospitality, so do feel free to mess with the proportions to taste.

Note that draining one of these rapidly will result in an immediate (if only perceived) loss of 20 years and 30 pounds. Remember that there is no diving in the shallow end for good reason and to otherwise be gentle wit’cha-good self.

Now don’t get me wrong — this drink is a calculated delivery method for some hardcore pirate juice. While I would absolutely believe that Smith & Cross is the absolute best Navy rum ever to ship out of the Caribbean or elsewhere, a straight shot of this could still wilt the back bristles on a charging boar. Yet putting the bottle to your nose is like taking a trip to Neverland and, properly diluted, the flavor spreads out as rich, mysterious, and tranquil as a warm breeze off that fantastical isle-beyond-the-clouds.

This was all that passed between them on the subject, but henceforth Wendy knew that she must grow up. You always know when you are two. Two is the beginning of the end.
